Sorry, Henry: missed the post somehow.

You need to open the sparse image, as explained in the User's Guide, with Disk Utility. Once open, then you drag the mounted image volume into the source. You should then be able to drag/select the destination in the 2nd pop-up.

Alternatively, if you have a second Mac, you can put the Mac you want to restore in FireWire target disk mode and use SuperDuper! to restore.
