separation of system from users on drives

I know there could be issues from doing this. I have read on a couple of forums (macgurus, macfixit, david pogue) that there is a way to separate the user files from the os and apps onto a separate drive. Accomplishes speeding up the startup drive only having to access the platters for one purpose and separatelyif there is a crash the os/apps can be restored much more quickly. (i think a partition could accomplish the latter)

I am trying to speed up photoshop cs2 for batch processing raw images. Ram is maxed out but the application and operating system is on a slow drive and also competing with the user files.

Is there a way to setup the drives in such a way so the apps and os are on the fast startup (with the users) but reference the user folders from a second drive. not sure if i am asking the original question a different way.
