Doing a restore for the first time

Hi all - while I've used SD for back-up for years, I've never had to use the restore function. I'm having a new HD installed into my iMac and just wanted to make sure this is the correct procedure:

1. Create up to date back up (I am using an external FW drive)
2. Reboot holding Option key
3. Select external FW as boot up drive
4. Launch SD on FW
5. Select "Restore-all files" and choose destination drive

I'm just not sure if it will "see" the blank drive on the iMac.
