Thumbs up New to Super Duper - What is backed up?

Backing up is obviously important, and getting it wrong can potentially result in years of data being lost forever. For this reason, I would like to ask some questions prior to purchase of Super Duper.

I want to just copy all my user files to my 200GB USB hard drive, however my videos will for now be kept on the USB hard drive only due to lack of space on my Macs internal hard drive.

Can anyone clarify which option backs up what? The Super Duper description says "Backup - all files" makes a copy of Macintosh HD. Does that still apply if the Mac HD icon on the desktop has been renamed?

Can individual files be read (and restored manually without Super Duper) from the backup or does the entire thing have to be restored to access files?

Where are the email files, keychain files, and bookmarks files? The best option for me maybe to just copy and paste every folder/file that I want backed up.
