Backing up Folders

Sorry, this might be the same as the prior question about using "SuperDuper! as smart folder backup tool?" I don't know a smart folder from a dumb one

I'm a video editor and generally have several projects going on multiple workstations at the same time requiring 6 to 7TB's of data. It is a constant struggle to keep all the workstations backed up.

When projects where in the gigabytes cloning drives, although at times a bit messy, it was manageable. I can no longer afford to clone drives and it doesn't appear that SuperDuper! can manage backing up at the folder level.

Am I missing something, is it possible to back up and restore folders?

If not does anyone know of a good tool for this?
