Macintosh HD - Data and Macintosh HD
In doing a manual backup for the first time since upgrading to Catalina, I noticed there are now two choices for my iMac's hard drive in the Copy drop-down box: Macintosh HD - Data and Macintosh HD. SuperDuper allowed me to backup the Data drive but not the HD drive. Is this something new in Catalina or something I should be concerned about?

Yes - please use the v3.3 beta which you can download from http://www.shirt-pocket.blog.

SD is asking me to convert my hard drive from HFS+ to APFS. Should I do this? How long will it take, and what are the downsides?

I don't know how long it will take, but it's required: Catalina must back up to APFS. HFS+ does not support its new features. From here on out, it's APFS or nothing.
